You could also manually create a drop-in. Say you want to change foo.service. You'd create /etc/systemd/system/foo.service.d directory, then create a file that ends in conf, for example bar.conf inside that directory. Then make your changes there.

If you need to wipe out a setting from the default unit file, just add the directive you want to change but leave it blank and add a second one with your change. Example:

[Service]
After=
After=network-online.target
